HARVESTING: By hand. Harvested at optimal maturity.
VINIFICATION: Destemming, cold maceration, temperature-controlled fermentation, remontage (the pumping over of juice) and délestage (rack and return). Short time skin contact. Pressing done by pneumatic press.
AGEING: in conrete and inox vats..
TASTING NOTES: Sustained color, carmine red with lively shades.
Cherry, griotte and liquorice scents.
Freshness, elegance and suppleness in the mouth.
AGEING POTENTIAL: 3 to 4 years
FOOD-WINE PAIRINGS: This “pleasure” wine is to consume a little cool in the summer, with grilled red meat, or during winter at room temperature accompanied with poultry and roast meat.
